Aubergine, courgette and smoked rolled fillet of ham roulade

|3 tablespoons||olive oil|
Salt, freshly ground pepper
|16 slices of||Glocken-Beune Gourmet Smoked Rolled Fillet of Ham|
A few leaves of rocket to taste
- Wash the aubergines and courgettes, dab dry, and cut them lengthwise into 8 slices each, approx. 4 mm thick.
- Brush with olive oil and fry in a hot frying pan or on an electric grill until both sides display a typical grill pattern.
- Season with salt and pepper, and allow to cool.
- Lay the slices of courgette out on the work surface. Put 1 slice of aubergine and 2 slices of fillet of ham on each (slightly staggered if desired). Put 2 dried tomatoes each on the ham and roll up the vegetables to form little rolls, with the ham and tomatoes inside.
Serve garnished with rocket as you please.
