Aubergine, courgette and smoked rolled fillet of ham roulade

2 small aubergines
2 courgettes
3 tablespoons olive oil

Salt, freshly ground pepper

16 slices of Glocken-Beune Gourmet Smoked Rolled Fillet of Ham
16 dried tomatoes

A few leaves of rocket to taste



  1. Wash the aubergines and courgettes, dab dry, and cut them lengthwise into 8 slices each, approx. 4 mm thick.
  2. Brush with olive oil and fry in a hot frying pan or on an electric grill until both sides display a typical grill pattern.
  3. Season with salt and pepper, and allow to cool.
  4. Lay the slices of courgette out on the work surface. Put 1 slice of aubergine and 2 slices of fillet of ham on each (slightly staggered if desired). Put 2 dried tomatoes each on the ham and roll up the vegetables to form little rolls, with the ham and tomatoes inside.

Serve garnished with rocket as you please.
